I have a 68 Camaro and I swapped out my mono leaf springs (I think they were the original ones but am not sure) for 3 leaf.

The reason I did this was because if I had anyone in the back the tires would rub and they were just 14" on stock rally rims. Well it fixed that issue but the suspension fells very stiff to me. When I hit bumps its a bit harsh. The shocks are new and gas filled. It also lifted the rear off the rear tires a bit too much and it looks to high for my liking. Will this get better with time?

If I get new mono leaf springs will that fix the ride from being stiff? I also wonder how much it will lower the rear. It's hard for me to tell because as I said the old monos were shot.

Ed the right shocks will help greatly if your new springs are not too stiff on their own. To get a better idea, what brand springs and shocks did you get? I have Hotchkis 3 leaf and found Koni Classic adjustable shock set on the lowest setting produced a great ride. I tried them on the middle setting and the ride was too harsh.

Also wheels and tires can have a big impact on ride quality. I had BFG's on 15" rally wheels and switching to Dunlop GT Qualifers greatly improved ride quality. Then switched to a quality 17" wheel and 45 series tire expecting to have a harsher ride, it actually got better still. As it was explained to me, the steel wheel is very ridged and the tire has to do all the work. The 17" alum wheels have more give to them so the low profile tires share the duty of ride quality.

If the ride height doesn't settle to your liking you can get them de-arched a little or you can run a lowering block.

New springs will be give a firm ride after being used to 40 year old mono springs but will soften some... but not a lot.

The other option would be to maybe take out the shortest spring to soften it some but then you lose load capacity.
