we're looking at getting our 69 blasted, when we get it back the 1/4 s and trunk and floor pans will be cut out, question is, do you think spraying the car with PickleX-20 would be worth the effort and to give us more time to get a coat of epoxy primer on after we cut out the rust areas?

It will probably be worth the effort. I use it for coating bare metal to keep it protected until I can get it primed. Several spots on my 69 has it on it now and has been like that for months...indoors of course.
