Yep, I think we're up to about half a dozen seperate posts on this one. :)

The shops don't have to justify their pricing. People either pay it or they don't. Fortunately for them, most people do. Not that I agree with it. The demand for their service obviously warrants their pricing; if they didn't have the demand, their pricing would go down.
