I have a cracked dash pad on my 67 camaro. How hard is it too change and about how long to do the job?

You will have to disassemble the dash and drop the column to get to 4 Nuts holding the dashpad to the top of the metal dash. The Gauges, Heater Controls Assembly, and Glove Box will need to be removed. The rest of the hardware is visible from the outside. Phillips Screws hold the dashpad to the front of the metal dash. It is not a hard job, just a time consuming one.
Hope this helps.

As Tory says, it's time consuming as there is a lot of stuff under the dash in the way to get to the nuts up inside there. I had an upholstery shop recover mine with similar material and it looks great.
