Should I get the preassembled doors? I hear they are not pre assembled all that well...
If I dont get the preassembled what other parts would I need to buy from Classic Industries to finish the panels off myself?

Actually, the pre-assembled are THE way to go... They include the metal uppers,and are ready to install. Just need emblems and armrest to complete. The unassembled do not include the steel upper portion,just the material to cover the old ones. You'd need to transfer your old "steels", and believe me, unless you are good with upholstery, it can be a real PITA, and look rotten to boot. Just my 2 cents, but go with assembled. Its worth the extra $ on a 68-69 :)

Some of the pre assembled door panels have cheap reproduction trim. Maybe you can use your original trim if you still have it.

I used PUI gold preassembled pannels and I am really happy with them. If you are really particular about haveing it just like the factory did it you may not be happy. The origanal pannels are 2 parts and have a seam where they fit together. The new ones are 1 part with no seam. 99.9% of the people who see them would never know but if you are building a 100 pt show car you may want to go with the one you put together and reuse your old upper metal part.
I have heard about the trim issue but so far so good with mine. I still have the factory ones if I need them.

I heard classic industries uses PUI. I dont see "gold" as an option though. Do I need to call them? I need a complete interior standard kit.
