alright i have a 350 small block, with dual quad holley 450 cfm carbs on a weiand hi tunnel ram. The engine idles great, but when dropped into gear the engine sputters, drops rpms but stays going. And when you apply acceleration it wants to quit. It might be a timing thing, not sure where the timings at i just adjust the distributor, so by hearing. And i dont know where im idleing at the tachs not in yet. So any help would be greatly appreciated.

Jay..invest in a timing light and a vacuum gauge.Hook up your tach and then post timing/vacuum at idle and rpm. This will go along way in assisting you with your question.

i built a tuff truck with a big lumpy cam and stock turbo 350 with a stock converter and it did the same thing. unless you had the rpms up to around 2500 and slamed it in gear it would die.

those two don't go together. The cam needs a looser converter than stock to idle in gear. Cam specs would verify this for sure, but going by your description I'd say that's the issue, since it idles fine in neutral/park.
