Broke in my engine yesterday and saw two very strange things happen. Both happened right around the same time. about 15 minutes into the engine run, the coolant water started pouring out the radiator's overflow hose, then I noticed the power steering pump was geysering fluid out the vent hole of the fluid cap. And I don't mean a little trickle... I mean a constant spray about 6 inches into the air all over my heads and exhaust. Then when the engine was shut down I heard quite a lot of gurgling water sounds through my radiator and upper hose that goes to the T-stat. Today I looked into the radiator to see if I had perhaps over filled it but found the water level about 8 inches below the fill cap. Anyone have any idea what gives?

Sounds like you had air trapped in the block/heads. Are you using the heater? If the core was empty that would cause it too. Most repair shops have a tool called an air evac that attaches to the rad cap neck and pulls a vaccuum on the system. Then a hose is attached to the air evac with the other end in a bucket of 50/50 mix. They open the gate valve and the vacuum sucks the coolant from the bucket filling the system completely.
When I start a new motor I leave the cap off which allows the system to burp and you can also see the level.
As far as the p/s goes sounds like the same issue too much air in the system. Siphon out some of the fluid, start the engine and turn the wheel from lock to lock. This will bleed the air out. Then check the level and top off as necessary.

Unbolt your thermostat housing and pull off the thermostat , refill through your radiator until you see the antifreeze coming up through the water jacket where the thermostat was. reinstall thermo and housing then top off rad. This will push out most , if not all of the air trapped in the block. Never had a problem doing it this way.

I'm with Matt on the power steering issue.
