When painting the hood springs/brackets, do I use gloss, satin or what?

The springs are semi-gloss black. If, by "brackets", you mean the hinges themselves, they were black phosphated.

I believe the hinges are supposed to be a grayish color, as well as the hood latch assembly.

Gray Phosphate for both the hinges and the springs. Bolts were black phosphate. Available from Palmetto Enterprises in South Carolina.
