It sounds like an air pocket, take the cap off and let it bubble over out of the radiator at the same time make sure the coolant starts to circulate when it gets up to temp and the T-stat opens.. Also try to park a little up hill.

Sounds like a bad fan switch. (I assume electric fans.)

Need more info...Electric or manual fan(s)? Fan shroud? Does it get hot at idle or when driving?

Also it may be a dumb suggestion, but make sure you are using 50/50 antifreeze and water. A radiator tech once told me changing the ratio to more than 50% antifreeze would make the car run hotter as water is a better heat sync than antifreeze. The more antifreeze beyond 50/50 the hotter it may run.

Once you confirm the coolant is circulating, warm it up and check the temperature with a thermometer. This will let you know if the guage or sending unit has failed.

if it isn't boiling the water, it isn't "overheating".
those cars are supposed to run at about 220 degrees- and with a good radiator cap, they are "safe" up to about 250.
i think the gauges on those cars are run by the ecm- so if it says it's running at 230 all the time, then you might have a bad temp sender in the intake.
that being said, do you have all the ductwork under the front of the car? if an air dam is missing, it will get hot on the highway.
