Hey guys, I see people talk about coating your car with por15 or something of the like after you take it to metal.
So, if I am doing body work and I remove the primer to much from blocking and it takes off the coating where metal is showing again, do I just spot it in again before adding primer again?
Or if its a smaller area, is it okay to prime it and move on?

Depends - if you are not going to be leaving the bare metal exposed for more than only a day or so as you finish the rest of the panel, and the local conditions aren't to humid/damp, then it will be okay to leave open until you prime the complete panel.
Otherwise, it is a good idea to first try to plan your work so you finish an entire area and can prime it - or spot prime the open metal areas before setting that panel aside and priming later.

Thanks, as long as I prime it daily I should be okay?
I have to strip the roof to bare metal because of bubbles. so I can just prime it right away with out sealing it?

 I like to plan my bodywork so I can shoot primer at the end of the day - but before the evening cools down to much or dew starts to form, then I'll cover it with plastic in the shop and wait until the next day to wipe down and shoot.
If you strip the roof and find rust pitting, then you'll want to treat the area with an acid product (like Ospho) to make sure you don't leave any active corrosion under the primer.
It's not rocket-surgery - just take you're time in prep and you'll not have to worry about things forming under your primer/top-coats and ruining you finish later.
(note: you can find acid based metal prep cleaners in most auto paint stores, or even many hardware stores - I buy most my OsPho in quarts from the local TrueValue hardware in my hometown)

Epoxy all bare metal for corrosion resistance and work on it at your leisure. Epoxy is your first substate to apply in the bodywork procedure.
