I would mill the o-ring grooves out and bolt them on and go.

To run the o-ring head, you need to o-ring the block also and install a stainless wire in the groove on the block and use a copper head gasket. The wire in the block groove forces the copper gasket into the "reciever" groove in the head when the head is torqued down. This locks the head gasket in place to keep the chamber sealed when the head lifts under extreme cylinder pressure.

Unless you are running a blower with well over 10 pounds boost, I would stay away from grooves. Copper head gaskets are a pain in the --- to seal the water jackets with and not very reliable for a street motor.
