I have noticed that some of you that run 383's have run into some oil pan clearance issues with the stroker cranks and stock pans. I was looking at some of the Milodon pans but there are so many variations I don't really have a clue what is needed and what is just for "show". Anything in particular I should look for? I don't want chrome...and this isn't a show car by no means, just looking for something that works.
And on a crank scraper, do they just fit between the block and pan on 1 side? Looks to me like the potential for huge oil leaks. Am I missing something here?

A stock replacement pan should work fine IMO. You might have to dimple to clear the rear counterweight (I did) but personally I don't think oil pans are that big of a deal on an engine that spends most of its time on the street and an ocassional 1/4 mile blast.
The crank scraper is a PITA to set up --- filing all the notches out to clear the crank and rods took me the better part of a day. Then I glued mine directly to the block with Permatex black (as opposed to using a double gasket) and let it completely cure before putting on the oil pan. It doesn't leak. BTW Remember it goes on the passenger side of the block so it scrapes oil off into the pan.
If I had it to do all over again, I would have installed a full windage tray and left out the crank scraper.

I suggest to go to the dealer and buy the 5 main brg cap bolts and a Z/28 windage tray. Buy the Moroso oil baffle between the pump and brg cap and fit an oil pan, Z/28.
Sorry, had to edit. Thought about this one and the windage tray wouldn't fit, too small, but, the other suggestions would work. I'm sure somebody sells a stroker windage tray. Who knows, it might even fit on those main brg bolts.

I used a 7qt moroso pan on only fill it to 6qt and don't use a windage tray.

I have a milodon low profile 7 qt with the stroker windage tray on my small block 427. It works like a champ. The windage tray is for strokers and has plenty of clearance.

I have a Beck 383 and they put a 7 qt Summit pan and Summit pump/pickup (really a Melling HV). It fits properly, uses the Felpro 1880 single piece (thick front), has the correct depth pickup already prewelded. Pan is $73 and pump/pickup is $57. Works very good, looks just like a Moroso pan
