I currently have a 68 Camaro with a 350 bored .060 with stock stroke. Is there a standard distance between the top of the piston and the top of the block??

Yes, while at TDC the piston should be .005 below the deck of the block.

What 2-67 Camaros is saying is to shoot for a min. deck height dimension including the head gasket, of .035"/.045" for a steel rod engine. This will give best quench and help fight detonation and stuff like that.

Usually the composite gaskets compress to about .038" or so which with .005" more will put you at about .043".

Shims are different at about .018"/.022", so the piston can be farther down in the hole. IMHO. pdq67

pdq67 is right. Any closer than .035 and the pistons may hit the head in the upper RPMs. Any farther than .045 and you loose performance due to poor quench in the combustion chamber. If you use a .038 thick head gasket (compressed thickness) then you should have +.003 to - .007 deck height.
