I would like to paint my GM block traditonal chevy orange. I want a high quality paint job. What is the best way to go?

Imron, Flamboyant Orange. Always shiny, never needs waxing, somewhat chip resistant.

Does this come in spray cans or do I have to spray with a gun?

There are a lot of good engine paints out there that come in spray cans. I used to have an OSH (Orchard Supply Hardware) here in town (they moved), their engine paint was great. I think it was called Aervo or Aevro (something like that). Once I wasn't able to get that anymore I started using Plasti-kote Engine Enamel. There is also a clear that can be used with it.

As with painting anything the prep work is very important. If you buy the most expensive (best) paint on the market and put it over a surface that is not prep'd correctly it will not come out nice.

POR has an engine paint that you paint on with a brush but dries to a glossy finish that is smooth with no brush strokes and will outlast any puff-can job. Check it out: http://www.por15.com/product.asp?productid=284

Here are my before and after pics of my cast iron intake, I used 3 coats of POR Chev orange and 2 coats of spray clear coat. So far looks great.
