Do you have a fan shroud?
Are you running a thermosat? If so, what temp?
What is the condition of your radiator?
I'd definitely replace the water pump, then make sure everything else is in good order. Fan shroud is very important for idle cooling.
Carr Chev in Beaverton should be able to get you a water pump...if you want original for a resto check with Super Chev Parts on East Stark in Portland, 256-0098.

I'd be curious to know what you mean by "overheating". Is it just a high temp reading on the gauge, or is it boiling over and spitting out the vent tube?
What is your thermostat rated?
Have you replaced the rad cap?
Did you have the block bored and if so how much?

Sherwood? How would you like to live in Sherwood? Sure would! Sorry - bad local joke. I'm working on the 14th so I won't be able to make the show.
I'm baffled on your cooling problem. It sounds like everything's new. Perhaps a new H20 pump will clear things up. The only other thing that comes to mind is retarded timing or perhaps the cam was installed retarded. Hopefully someone will pitch in with some other suggestions.

Listen, maybe they used the wrong head gasket
when they rebuilt it.. I saw the same problem on a z28 that a buddy of mine had. And problems started after rebuild. Maybe timing is too advanced. Also check to see if your catalytic converter isn't red hot may be clogged. You may also have an intake manifold leak..
