I just decoded a 67 cowl tag and find that the line that reads 741-Z decodes to be 741 = Standard Red Bucket Seats, but then the next letter Z = (A50) Strato Bucket Seats.

Is there a difference in the seats?

For 67 all the seat codes had a letter code after them. There was never just a 741 code without a Z or Y after it. "Strato" is just what Chevy called the seats.
