Pulled out the body mounts, and found that the holes for the ones right below the firewall area are all hogged out. Looks like I'll need to do some patching there. No big deal.

Now to the part I'm not sure about-

At the back of the subframe, I pulled out the old mount, and found that the subframe is cupped (not a flat mounting surface). What do I do there?

It's only a matter of a few short weeks before I start her up again. My foot is twitching already.

Maybe the frame surface has warped slightly over time and driving stresses. These areas should be relatively flat to make good contact with the bushing. Is there any rust damage on the frame where the bushing sits? Maybe you can pound out the cupped area with a block of wood and bfh. If there is rust damage you can patch it which can help add some strength too.

No rust, just caved in so the surface isn't flat. I could try beating it back, but I'm not exactly sure how I'm going to get up in there (I've got subframe connectors welded in behind.) I'm thinking if I can't beat it out, I might just throw a big washer ontop of the frame to make a flat spot. How's that sound?
