They would put a lot of rubber on the road if you want to go in a straight line...but would be pretty awful for handling. 225/60 is probably best for handling on a 7" rim, and I would suggest 245 wide max.

275 is probably a little too wide for an 8" rim, though it depends if you want a big contact patch or good handling.

You (or your tire installer) will have a HELL of a time trying to get that tire to seat on a 7" rim. I had a bitch of a time seating mine on a 17x8" rim. For a 275/40/ZR/17, i'd recommened a 8.5-9.5" rim.
