I have the same setup on my car. I got the parking brake cables from the local auto parts store. I need to get the lever and springs off the back of the calipers for the cables. I have been told they are still available GM. We will see.

If you are missing the hose that attaches directly to the caliper, you may be in for a surprise as it takes a special fitting/hose combination for this set-up. You will probably end up having to buy the parts new from GM. You mentioned needing e brake brackets and cables. This same rear disc set up can be found on the rear of 79 Cadilacs
(Sevilles!). You can use the e brake brackets off that car and maybe even the e brake cables and for sure the brake lines and Y hose set up. You probably already know this but it can't hurt for me to say it again here. You will need to change your master cylinder and your proportioning valve. You can use those items off of the 79 Firebird.
