When i cut the wheel left or right to its maximum, the engine sputters out. I know its a simple explination, just cant remember what it is.

Here are few things to watch for. First, is the throttle rod binding on the throttle bell crank? Sometimes the end of the rod sticks through far enough to bind on some carbs. The solution is to back off the throttle rod.

Make sure the choke is properly setup. If it isn't then you may have the fast idle screw holding you up. Also, if the choke doesn't work properly at all, the fast idle cam may be sticking.

Vacuum leaks can cause fast idle. Do you notice any back-fire problems off idle?

On Holley carbs, there is a screw that holds the secondary throttle plates open a hair. If the secondary throttle blades are too far open, it won't idle down properly.

A lean idle mixture can mess with your idle as well. As the car warms up it will idle faster and faster.

Thats exactly what happens, it idles faster and faster unless i manually lower it.

That almost sounds like an automatic choke that isn't working properly. Could be that the choke isn't applying as it should but as the motor warms up the RPMs increase as the fuel vaporizes better.
