The engine in my 68 is a fresh build and doesn't even have 100 miles on it yet. Once I get this thing back on the streets "which should be very soon", when should I give it its first oil change? I was advised by others that a new engine when being driven for the first time will have many internal parts that need to "shave off" everything that it doesn't need and these shaving should show up in the first oil change. I don't know if this is either true or bunk, ( I've never seen this happen with a brand new car) but overall, when would it be best mileagewise to give it its first oil change?

What I have heard, if its a brand new motor, when you first start it you run it at around 1500 rpm or more for 15 to 20 minutes to break in the cam, lifters, rockers, etc... properly. You then change the oil and filter. Then drive for 500 miles and change oil and filter again, then your good to go

Kens got it. Though third change would occur at 2500 miles then every 3k there after.

If you change the oil, I would stop by my local GM dealer and pick up a can or two of EOS and add it to the oil. EOS is meant to be in there for 3000 miles.
