I will be re-wiring my 69 when I put her back together. I'm prob going to go w/ M&H, as I have heard many good things about them here.
I'm planning on an elec fuel pump, water pump, fan and gauges.
What do you guys think I should use for an alt, ... ?

Take a look in the technical referance section on adapting a late-model GM alternator into your car. Once you chose the alternator, fuel pump, etc. that you want you can have M&H make the wiring harness to your specifications.
The nice part about using a stock-type GM part is that it can be replaced when/if it ever dies on the road.
Are you building a race car? Belt driven water pumps are much more desireable for street applications.

It's going to be street / strip - mostly street. Thought there were some good elec pumps for the street - no?

Rob,
A belt driven pump will out-perform an electric motor driven pump in every way except the "trickness" catagory. They may save a few horsepower for a 1/4 mile car but their decreased volume, pressure, and reliability are a poor tradeoff on a steet car.
If electric motor driven pumps were "all that" then the OEM's would have adopted them.
If you are considering going the electric route be sure to call the manufacturer, talk to a technical rep or engineer, and tell them exactly what you want to do with the car. Most all electric motor driven pumps are not intended for street use.

I was lookin' at the conversion doc and wondered if I should follow the "SI" or the "CS" alternator?

My two cents worth, go for the CS conversion. It may be a bit more pricey but it is a better design and readily available.
