I am curious. Is there a difference in the door & rear quarter glass between a coupe and a convertible for first generation camaros?

Specifically a 1967 camaro.

No difference in the door glass however, 67 door glass will only fit 67 because of the vent window. There IS a difference in the Rear Quarter glass. Convertibles are cut differently than Coupes. However, 67, 68 and 69 Quarter glass will interchange with each other as long as you stay "Coupe to Coupe" or "Convertible to Convertible".
