My question is..
Do I just need HD coils(Front) and Multi-leaf springs(Rear)?

No you don't.
BUT I bet you will want to put h-d stuff under it to take advantage of all the new found power and added frontend weight b/c I did!
And I ran coil-overs in the rear as well as "thingies" in my front coils to stiffen my car up for years...
And while you are at it, you might as well work the brakes over and put modern rubber and rims on it so that it will handle it's best!!
I can in all truth say that my all drum brake car was down-right SCAREY when I had to haul her down at speed by down shifting while my rearend was hopping up and down AS I stomped as hard as I could on my brakes!! And boy, my old slapper-bars really banged then!!

So is there an inexpensive way to do a disc brake conversion? Also... Thanks for the info on the Spring-over..

I would look at replacing the SB springs with BB springs in front and monoleaf springs are OK for the rear but multi are better for the power transfer.
