I've read, understood and used the EOIC method for adjusting valves.

Is there any reason this wouldn't work as well?:

Get #1 to TDC firing, adjust both valves on #1.
Rotate crank clockwise 1/4 turn, adjust both vaves on #8,
and so forth through the firing order.

Prolly be same as one up , one down and making sure roller is on base circle of cam...

There are some cams that will have the exhaust lifter on the ramp at TDC. It won't be opening the valve obviously but will also not be on the base of the lobe, so you'll end up with a loose adjustment on the exhausts. The 302 DZ cam is one and there are numerous ones that cannot be correctly adjusted this way in the aftermarket cams.

I really would stick to the EO/IC method.
