All I can find is 26" tall tires. I'm going 17x8 front and 17x11 rear. The fronts are easy, but I'd like to get a little more size in the rears and I can't find any taller tires than 26" (keep in mind I want to go with street tires or drag radials, NO slicks).

If the rears are way bigger than your fronts, you'll get some understeer because all that traction wants to keep the car goint in the direction it was going before you turned and the fronts can't keep up with the rears. Eight inch wheels up front would probably be ok with 315's on the rear, though. As long as you're not trying to optimize handling.
