I don't know about any room temperature-curing adhesives marketed for collision shop usage, but the structural adhesives used in OEM body-in-white assembly require at least 20 minutes at 275 degrees to cure, and are used together with at least some spot welds in order to properly position the panel. Also, OEM's don't use adhesives by themselves in areas of the body structure subject to stress or heavy loads.

Ive used the bonding adhesives. As a matter of fact, I glued the outer wheel house to the 1/4s on my car. The stuff works great, but there are certain limitations and things that you dont want to do with it.
