I wired my fans for the radiator, and let it idle for a while and the fans never came on. Is there a way to test these as far as electrically without the motor warming up?
It is a dual Spal fan setup. here is a link to the PDF of the fan wiring diagram...

I have everything connected the way it is shown, and I have the 195 degree sensor...Is there a way to "hot wire" this to test the fans?

ground the grey wire to the sensor/ this will close the relay and if wired properly
will connect B+ to the fans

That worked...the fans came on...I wonder why they didnt come on when I had it running...it got pretty warm, warm enough that I thought it should have come on..I have a 180 degree thermostat and the sending unit is 195...Is there a way to wire this so that it will stay running once the car is turned off and until the temp goes down then shut off? In the diagram they show an optional switch, but I would like to to go off automatically when the temp goes back down once the car is off...am I asking too much to have this happen or is there a way to wire this for that?

If you want the fans to be able to run anytime the car is hot enough to trigger the sensor, ragardless of if the key is in or not, just disconnect the ign. pwr connection to the orangfe wire, and connect the orange and yellow wires together.
Yellow: Connect to positive battery terminal using the fuse holder and yellow crimp connectors per diagram (see back).
Orange: Connect to ignition switch +12 vdc when engine is in run position. (Hook to constant +12 vdc for the fan to run
continuously when the engine is hot even when the ignition switch is off).
