I want to replace some rusty bolts, washers & nuts with stainless steel, will stainless steel be as strong.

I do believe most stainless is grade five. As long as you're not using it for chassis or suspension, it should be okay. That calls for grade eight.

Keep stainless bolts away from alum materials,, they tend to corrode. Use a antisieze compond if heat related.
