Just ordered a mini starter from Summit.
Will I be able to remove the old and mount the new with the manifolds still on the engine?
Is there anything special that I need to think of when mounting the new one.

I just installed one of those myself. You will have to do a trial fit to see which way it fits best. The motor can be rotated on the aluminum mounting block 6 different positions.

I've never seen a Chevy small block starter that required the manifolds to be removed.

Generally speaking, mini-starters require less room than the factory starter. As a result you will have more clearance then you did with the original GM starter.
With a new starter make sure you check for proper gear engagement, shims are often needed with the aftermarket mini-starters.
