I put a new long block in my car new water pump new sensors new termastat new exhaust new rat new hoses. The car will idle at 195 timp but as soon as you give it some gas it will overheat need help fast

Retarded timing will cause heating problems. Is the radiator clean. does the fan fit at least 1/3 of the way into the shroud. Sometimes there will be obstructions in between the radiator and a/c condenser that will need to be cleaned out. Hope this helps. I have to ask questions before helping you, heh... are you saying, that it will sit and idle and not go into the red on the guage??? or stop and go traffic around town... (typically below 40 mph)??? or at highway speed (above 40 mph)??? have you observed the fans enguage while sitting idle at operating temps??? the operating temp of these cars is between 200 and 230*F typically... pay attention to the fan operation while sitting idling and note the temp (without letting it go into the twilightzone of course)... there are 2 fans so note which comes on and when (driver side or passenger side)... also... under the radiator support... is there an air deflector???
