You are going to need to strip the engine down to the bare block and have it checked out really good. To get the 500 and up range is asking alot for a street naturally aspirated 350ci engine generally speaking. For a block of this era to survive at those power levels generally needs alot of machine work.
As far as parts go. You will need a Crank more than likely I would say get a stroker (383ci is what I would look at) and I would suggest a 4340 material. Cam will need to be a roller (I prefer Erson) I dont know how much Street you will be doing but a Solid would be my choice if this is just a toy for the weekends. I would also use a set of H-Beam rods again 4340 material. Since your buying new I would go with the 6inch length. Pistons need to be forged I perfer Arias or for a more inexpensive choice Probe brand. I didnt see where you asked what heads to use but this will be make or break part as to how much power you will be able to obtain. I prefer Aluminum heads and you will get a many opinions but you can get the numbers you want with almost any aftermarket cylinder head some may require more tweaking/porting some less it just depends. Make sure you have the entire rotating assembly balanced.

Check out the new Hot Rod magazine (September) there's a cheap 500 HP small block chevy build up that should help you.

Use all the expensive ones ;)

Seriously, 5-600 well behaved street hp is best achieved with a good strong engine and N2O.
