That's kind of a loaded question.
If you plan to go with stock everything it would look like this.

Oil Pan
Motor mount adapter
ECM, harness, and injector harness.
Upgraded fuel system. Most people just buy a different tank and run jnew lines.
Transmission with trans mount.

There are two reasons to buy a swap pan instead of cutting/welding the fbody pan.

1) It's hit or miss welding a used fbody pan. Cast aluminum is pourous, and the pores absorb oil. You can try to bake the oil out of the pores in an oven, but you don't always get all of it. Any oil present will screw up the weld.

2) Capacity. You're losing about a quart of capacity when you cut the fbody pan. On a stock LS1 you can survive with the reduced capacity. With a built engine on the track, several people have sucked their pans dry and trashed their bottom ends.

I'm using the stock/unmodified LS1 engine harness and made an adapter harness to connect it to car (relays & power). If you can wire a big car stereo, you can make an adapter harness. Here's how I did mine:
http://www.blown.net/ls1swap/rodders...1t56wiring.doc. I put together that doc, then went through it one pin at a time hooking stuff up.

If you can't handle that wiring, the easy route is to get someone like Speartech or Wait4MePerformance to rework your stock LS1 harness. They can do the PCM tuning for you too, but it's really better if you go ahead and shell out for HPTuners or EFILive so you can make changes later yourself and also use one of those as a scan tool for troubleshooting if you run into problems.

I haven't heard anything good about Painless.

You need to go to http://www.ls1tech.com and search the conversions section. There is a ton of info there, especially in the stickies.

Pans are available from mild to wild depending on what you want to do. ATS, Autocraft, etc.
