the brakes (pdb) on my recently restored 69 camaro are very sensative they dont grab or lock up but when you touch them its like you pushed too hard. its just like ive always driven with non power and its my first time with power brakes

If the car sat for a long time it could be that there is some rust on the drums/rotors.
Just run it around the block with your foot lightly on the brakes and see if it goes away. This is a very common thing. If that doesn't fix it then you might pull the wheels and look at the drums/rotors and try cleaning them with brake cleaning fluid. during the resto process some junk might have gotten on the drums/rotors. If its bad you might have to replace the pads.

Another thing I just thought of is, did you just turn the rotors/drums down?? If so they might just need to seat in.
