I just recently installed a Weiland Team G water pump on my 350, running an electric fan and using a Griffin alum. radiator. Before I did this I would run about 180 on the interstate without fan, and 180 in town with fan. Now I just drove 190 miles on I-95 averanging speeds between 70 - 95 mph, without fan I was running at 140 degrees...in town, without fan I run right at 165!!! Is that too cold? btw 185 degree stat. Thanks in advance for replies

If it's running at 140 with a 185 'stat, the 'stat isn't working; if it was, it would regulate coolant flow to maintain the system at 180 or so. Have you checked your gauge against your thermostat housing with an I.R. gun to check its accuracy? Running at 140-160 won't let the oil get hot enough to boil off condensed moisture and cold-start blow-by contaminants, which just makes more acid sooner in the pan.
