I aslo lost a extra set of 386 heads that were rebuilt and cant seem to find a value on them either,

Can't you just make an list as complete as possible and send it to a few recognized camaro restorators and have them fill in the prices? They might do that if you explain why you need them, maybe they charge you a small amount for their time but your insurance company will take probably take their word sooner then some hearsay. Try to get quotes from them on their company paper so it will look like a little bit more official....
