My '69 327 starts fine from a cold start, but once it's warm, it seems to be really struggling to turn over.
It DOES start eventually, but when it does, it seems that the battery is barely there???
I installed a remote solenoid last year, but I'm not sure if this part of the problem or not. Could it be the starter, battery or what???
It's pretty embarassing, so I want to get it fixed!!
Any help will be greatly appreciated!

I've had the same problem with my car and it ended up to be my starter.
also invest in a handheld battery/charging checker, When my car is acting up (slow starts, dim lights) I plug it up to my terminals and it would tell me if the battery is bad or if the alternators working.

When electrical equipment heats up, things get weird... and can take more current. Your starter may just be getting tired, and could use a rebuild, or perhaps (especaily with headers) may be getting to much heat. there are starter heat shields available to help this phenomenon.
I'd start by going over all connections and make sure you have an adequete grounding strap to the engine
good luck
