Blown big block big block temp spike and overheat

Got a new ride. 55 bel air wit a 14-71 blown 548. I know i know its not a camaro but I trust this forum more than any other helped me with my other camaro and what not. Anyway. When it and up it idles and warms up nice and slow the once it hits 190ish the gauge spikes up to like 205 and keeps going and overheats. What's the deal? Thermostat? Air bubble? Never ran into this before

Pull the thermostat...and check it in a jug of water heating up with a thermometer... even so while out they are not expensive.. check the new one and throw that in

And bottom hose re-enforcing coil inside.....thermostat opens, more water flow.. therefore more suction between water pump and radiator, partly sucks the bottom hose closed

I dont run a thermostat on my blower motor. I use the moroso washers to restrict the flow. They sell a set of 3 sizes. I use the 1" one (middle one ).

They will say you have to have a thermostat but I have been running this setup for 11 years and go to Cruisin the Coast and sit in traffic for an hour and runs about 205. You need a good radiator, fans and water pump. Also blower motors like about 18 degrees initial timing and only about 32 degrees total.

What is the air fuel ratio? If it is too lean won't it run hot?
