Unhappy Bad Gauge?

Make a long story short. Bought a mechanical sport comp water temp gauge from auto meter to replace my electric sport comp. Thinking it would be more accurate with the full sweep design... Well it acts real weird. The temperature all the sudden goes up to 220-230 and wiggles around quickly for a minute, then shoots down to a "accurate" reading. I know its not the actual engine temp because I have a IR temp gun. Its always between 180-190.

To test it I took it out and heated it in a pot of boiling water. Needle rose perfectly smooth and stable to exactly 212 and stayed there. Why does it act up in the car? And why would my electric gauge work when this one wont?

Well, did a little experimenting and drilled a 1/8 inch hole in the thermostat. Thinking it might let out air pockes as zdld17 said. That alone fixed 80% of the bad readings. It still wanders up about 10 degs then comes back down to normal, but I can at least live with that. For now.
