Front spring replaced and steering wheel is no longer centered

After replacing the front coil spring in my 69 coupe the steering wheel is no longer centered. Would this be common for a car after coil replacement?

No. it would not be common. Unless you adjusted the tie rods etc, the centering of your steering wheel, would not change.

If the ride height changed, the caster and camber changed. I always had to set the toe in after changing the caster and camber. The toe could change the centering of the wheel.

yes have it realigned as yellow69 said ride high will have an affect. i do 10 aligns a day when you raise the front end the the wheels will toe in.

Should I wait untill I change out the rear springs & shocks before having the front end aligned or does it not matter?

I would wait unless you are going to put miles on it in between. Any change in the height will affect the alignment.
