I'm doing drum to disc conversion and replacing rear wheel cylinders too. I have a gallon can of brake fluid I've had for years. Can I use it or should I buy new? How much will be needed for full system?

If it's still in a sealed can, it should be fine. If the can has been opened, I wouldn't take a chance on it, as cheap as brake fluid is. A gallon should be more than enough.

Brake fluid should last forever if you dont let moisture get to it.

Buy a new can, after all, it is your brakes and you don't want to take chances and fluid is cheap.
