Quench means to snuff out, to put out the fire. This is accomplished in an internal combustion engine by enclosing the possible fire in an area closely bounded by cooler materials. If the cooler materials disallow the fire from happening, you will have quenched it. The cooler you can keep the metal, the less chance of detonation.

In terms of engine design it is the distance between the top of the piston and the bottom of the head.
This actual distance or clearance can be somewhat theoretical in engine design, as the actual piston travel in dynamic operation will be slightly farther (or longer) than the initial static measurements taken during engine assembly. This can also be effected by engine operating speeds in the upper RPM ranges.
Stock engines will commonly have quench values in the 0.060+ ranges, many performance builds try to get this into the 0.030~.050 range to increase compression squish effect and engine output.
Most endurance engines will have clearances closer to 0.045+ to prevent issues at high engine speeds.
