210* on a 180* thermostat? it's a 302 motor. - Team Camaro Tech

My 302 runs great and pulls hard. A few months ago I installed a temp guage because the factory one sucks. The car warms up and runs at 180* or slightly below when cruising. When I stop at lights or let it sit the temp goes up between 200-210*. This weekend I changed the thermostat and flushed the coolant. Same thing again. I haven't let the car keep sitting when it approached 210* maybe I'll try that to see if it'll actually over heat. I know that 210* is still okay for a small block but just wondering why this might be happening when I use a 180* thermostat. Is this normal operating behavior? Is this typical for a 302?
