oil color

After break-in ,the first oil (Delo 15-40 with EOS and assembly lube) came out dark. I changed the oil one other time to go from Valv 10-40 to Valv 10-30. The 10-30 I just drained after re-installing the heads was very dark also. Only 200 miles on the engine. Is the dark oil normal saying the engine needs more break-in or what? Do combustion gases make the oil dark?

I don't think you have enough miles on it to even begin to tell..

I used EOS, Moly Lube and 30wt to break mine in as well as I retorqued my heads after a days commute three times and then change my oil at say after a week or up to 500 miles!!

Then daily drove her until about 3000 miles and then changed again to see how my oil was doing..

Yes, they do - that's what detergent oils do - they hold contaminants in suspension; I wouldn't worry about it.
