Unhappy My 68 camaro running rough

Im new here so be gentle. I have a 68 camaro with a 350 in it. Runs great until I'm stuck in traffic. I run between 170-180 driving around town, but when I sit at red lights it starts going up. I dont think im overheating but It starts acting like its going to die, when i get going the temp goes back down, if i sit for a while it starts running rough again. I have a flex fan with shroud. My fan sits all the way in shroud, I have ordered a smaller spacer. Any advice.
