Fan Temp Switch Location

Hey guys,
I've been searching the archives but can't make a decison on my water temp sending unit and fan temp switch. The motor is a new 383 with AFR heads and Edelbrock air-gap intake. The motor builder recommended a 160 degree thermostat which is what he installed. I was thinking of putting the water temp sender in the manifold by the water neck and the fan temp switch on the driver's side head between #1 & 3 cylinders. I'm a little concerned that the fans will stay on all the time with the switch in the head, but mayber not with the 160 thermostat. I'm using the Entropy fan switch.

Any thoughts?

The best place is the radiator return tank.
Second best is manifold by the thermostat.
Third is cyl head.
Yes, fan will be on most of the time.
