Full service shop in So Cal area?

Hey guys,

Anyone know of a full service shop in So Cal somewhere not too far from Temecula? Looking for somewhere that specializes in pro touring type Cars for my 69 camaro. The car is in good running condition and I'm looking mostly for upgraded parts installation and some minor custom fab. First up will be suspension, rear end, brakes wheels and tires. Wanna do exhaust with some custom routing, new dash, wiring etc next. Also I know it's probably unrealistic but if its a shop or garage that I can stop by and watch some of the work be done (just to learn) that'd be a huge bonus. Not a major deal on that though, I'd imagine that's hard to find. Anyone recommend any shops with owners that stick to their word and run a legit biz? Might consider a private garage with someone willing to take on a project as well? Thanks in advance!
