I keep seeing these (and getting outbid :) on Ebay. Were the 160 speedos a factory option, or an over-the-counter part, or something that GM never did and some third party came up with?

General is correct. I often see them at swap meets. In fact last April I found a 160 speedo with a very nice housing for $25. So keep looking they are out there.

The 1968 and 1969 Yenko Camaros came with 140 Speedo but I have not heard of any special speedo for a 67 Camaro.

I put a 160 MPH speedo and ralley gauges from a Firebird in my 67 RS two months ago. My Camaro has the factory 8-Track so I have no room for the OEM console gauges. The Firebird cluster has the 160 Speedo on the left, the Fuel, oil, amp, and temp gauges on the right. Unfortunatly there is no tach
in the cluster.

Be carefull about swapping just the 160 speedo. The Firebird 160 speedo also contains the brake light and both the left and right turn signal indicators. The Camaro 120 speedo has only the Left turn signal and a couple of idiot lights

Torch is not quite correct. Only the instrument clusters that came with gauges have both directional indicators on the speedometer. If you find a cluster with a 160 speedometer on one side and fuel gauge on the other you will not encounter that problem.
