I just bought a 81 Camero that's been stored since 95. I am happy with my purchase, but i am not sure about the electronic carborator. It is a 229 six cylinder. Can I take the electronic carborator off and just put on a Holly Two Barrel.

If so what would be the Pros and Cons of this?

Next week we'll work on 'CarbUretor' ...

Isn't that one of the Weber/Holley "VaraJet" 'Variable' two barrels
These are a pain to rebuild if you don't know them well.
Yes, you may be able to refit with a Holley unit - check with the Holley Tech Line to see if they have a recommended Cat. No. for you vs. calling some supplier.
Once you have a number you can check with Summit and Jegs to see if they have it.
The JEEP guys are switching them over to these - http://www.vintagejeepparts.com/Special_K55134.asp
Lots of small GM 2.4~3.0 V-6's, L-4's and L-6's came with them, so check with a local auto parts store to see if a boxed rebuild is available.
