A mechanical choke setup is easy, but cheesy IMHO. Most 1st gens now how electric chokes because much of the aftermarket hardware has taken away some of the "features" used by a factory choke (such as a heat riser).
All automatic chokes rely on heat to operate them. When they are cold a bi-metalic coil spring causes the choke plates to close and a plastic cam to drop and raise the idle speed. As the engine warms up (or the electric choke heater warms up) the spring uncoils opening the choke plate and raising the fast idle cam to drop the idle speed down to normal.
Electric chokes are very easy to setup. The only problem with them, is that they cool down fairly quick. As a result, a warm engine might go through a period of fast idle before the choke warms back up.
Almost all chokes require a seasonal adjustment from cold to warm weather to prevent over or under choking as the seasons change.
A manual choke will require the user to fiddle with the choke knob as the engine gradually warms up.
